Organic Refrigerator Pickles Recipe
These pickles are tasty and fast to make. The jars make lovely gifts, and it’s a fun project to do with the kids. Try to get organic cucumbers. There have been tests on what fruits and veggies have more pesticides and toxins, and cucumbers are on the top of the list. Look for smaller cucumbers; the large ones taste bad.

Ingredients
- Small Summer Cucumbers sliced in spears or cut in rounds - 12 to 15
- Organic Apple Cider Vinegar - 2 cups
- Water - 2 cups
- Honey - Two tablespoons
- Pink Himalayan Salt - Two tablespoons
- Hot Pepper Flakes to taste - I put in 1 teaspoon per jar
- 12 Cloves of Garlic Whole - 3 per jar
- Big bunch of fresh dill
- Four tablespoons of pickling spice, one tablespoon per jar
Instructions
Put jars, lids and rings of your pint jars through the dishwasher, right before you plan to make the pickles. In each jar put your spices, garlic and 3 or 4 dill sprigs. Take your sliced pickles and arrange nicely in the jar. Pack as tight as you can.
In sauce pan take your water, vinegar, honey and salt and simmer for 15 minutes or so. Ladle your hot liquid over your cucumbers. Fill to the top.
Put rings and lids on and let sit until cool, about 2 hours on the counter. When cool place in frig for five days. The pickles are good for about four weeks in the frig.
