One of my family’s favorite meals is breakfast! I love to have the whole kit and kaboodal! Potatoes, breakfast meat, eggs, really good bread made into toast. Depending on the mood it might be scrambled eggs served with fresh made salsa or perfectly fried eggs over medium, or as we say… dunkey eggs.
This recipe is quick and easy and can be made with other low carb veggie ideas. Such as sweet potatoes, cabbage, or leave the potatoes out all together and substitute the potatoes with cauliflower. Roasting the veggies on a sheet pan lined with a baking sheet makes for super easy clean up as well. This method of cooking is so much easier than frying the potatoes and more healthy as well.
No Guilt Breakfast Potatoes
Make a big batch of breakfast potatoes in the oven and add low carb veggies so that you have more nutrition and few carbs and calories
Chop all veggies in similar sizes. Place all the veggies on the baking sheet and put the oil, salt, pepper, and fresh herbs and toss to coat.
Place the sheet pan in a preheated 400 degree oven for 30 to 40 minutes. When you have some nice browning on the potatoes, they are done.
