Easy Grilled Shrimp Bake
- extra large / peel or no peel its up to you 2 pounds of extra large shrimp
- cut in bit size pieces 1 pound of cooked sausage
- 2 pounds cut and steamed potatoes
- 4 ears of corn broke in half and steamed
- you will be using the Old Bay on the shrimp and veggies 3 teaspoons Old Bay seasoning
- you will be using the fresh herbs before and after cooking 3 tablespoons of fresh chopped basil
- you will be using the lemons before and after cooking 2 lemons zested and juiced
- This will be tossed over your warm corn and potatoes 3 tablespoons of good olive oil
- salt and pepper to taste
- This recipe comes together quickly, but there is some prep work to be done before the pan hits the grill.
- You need to cook your corn and potatoes in advance. Salt the water for the potatoes and corn to give them more flavor. If you tried this recipe with raw veggies it wouldn't work.
- I like Yukon gold or red potatoes for this recipe and of course use fresh corn. You want to boil or steam the veggies just until done. Don't overcook them.
- Try to cut your potatoes and sausage about the same size as the finished product will look much nicer.
- Heat your grill to 350 degrees. We are cooking this recipe off heat. This means only half of your grill has the fire lit. The meal cooks on a half sheet pan, the pan should not have flames directly under it. You are really using your grill as an over. If you want to get creative you can add smoking chips while you heat up the grill to give this recipe even more flavor. You will want your chips already smoking when you put your pan on the grill as this recipe cooks fast.

- Take your cookie sheet and line with foil.
- In a large bowl add your hot corn and potatoes, olive oil, a squirt of the lemon juice, and season with your Old Bay Spice and half of your fresh herbs. Toss it well.
- Take a second bowl and put your uncooked shrimp in it. Sprinkle the other half of the Old Bay spice over the shrimp along with your lemon zest and juice of one lemon. Toss well.
- Cut up your smoked sausage in to bit size pieces.
- Next lay out your potatoes, corn, sausage and shrimp. Lay the ingredients out evenly on the cookie sheet. Take your time and make it pretty.
- Next, take the pan out to the grill and place on the part of the grill that is off the fire.
- Close the lid and cook 30 minutes. The entire meal is really cooked except the shrimp. You want your shrimp to turn a bright pink and your sausage to juice out a bit to add flavor to the veggies.
- Before serving squirt with more lemon juice and add a bit more fresh herbs for color.
- This meal is is great served with a green salad.
